I absolutely LOVE ferrero rochers which comes as no surprise as I’m obsessed with nutella!
There is something about unwrapping the gold foil and the smell of sweet hazelnuts that escapes. It takes me back to my childhood. These were one of my grandmothers favourites and she would always store her chocolates in the freezer. Does anyone else do that?
This recipe is pretty close to the taste of the real thing and they are delicious balls that do not last long in my household.
I have resorted to hiding them in the back of the fridge as they’d be none left for me!
These balls are made using only 5 ingredients some of which are considered a superfood.
This does not mean you can eat tonnes of them as they are still sweetened with maple syrup, although it’s better than using refined sugar.
I made these to take to a friend who had just had baby as a little gift and she was delighted to receive them.
So if you are looking for homemade Christmas gift inspiration, then these are perfect!
Ingredients
250g chopped roasted hazelnuts
18 whole hazelnuts
2 tablespoons raw cacao powder
1 teaspoon of vanilla extract
a pinch of salt
3 tablespoons maple syrup
Method
In a food processors blend the 150g of the roasted hazelnuts with the cacao, vanilla extract and salt.
Add the maple syrup and continue to blend until the ingredients stick together.
Roll mixture into approximately 18 balls and insert a whole hazelnut into the centre.
Place the remaining chopped hazelnuts in a dish and roll balls to coat.
Freeze balls for 30 minutes to set.
Remove from freezer 10 minutes before eating.
Hide from children!
